Taste of Tuesday: Healthy Banana Dessert

This is going to be the easiest recipe ever!  We have been trying to eat healthier, but I still have a ridiculous sweet tooth.  Last week I was craving something sweet, but wanted to eat something healthy so I made this dessert.  Took 30 seconds and was SO good!  Original idea found here and Jess @ Wonder What's Next has also made it before!


Ingredients

  • 1 Banana
  • 2 Tbsp Honey
  • 1 Tsp Cinnamon
  • Small Handful Dark Chocolate Chips


Directions

  1. Slice banana and spread out on plate.
  2. Add toppings (I completely guessed the amounts so use your best judgement).
  3. Enjoy!

Weekend Update!

Is it already Monday?!  I also just realized this weekend is Memorial Day - woohoo for another 3 day weekend!  Friday night we went to dinner with our neighbors.  We have the best neighbors!  We are so lucky to have so many young people who live by us.  I guess that's the perk of living in town and not in the suburbs.  We ran errands ALL weekend long!  I guess we had a lot of places to go.  Yesterday we celebrated Joey's Grandmom's 80th birthday!  I didn't take any pictures though... oops.  After the birthday celebration, I finally got a big fancy camera!  We've been looking at them for a couple weeks now and decided it was the perfect early anniversary present for me especially with our Europe trip coming up.  We decided on the Canon Rebel t5i.

Thirsty Thursday

Earlier this week Kristen @ Hopelessly Ever After emailed me and asked if I could participate in her link up.  It has to do with alcoholic beverages and I don't think I've ever talked about that on the blog before.  How could I say no?!  We are surprisingly not huge drinkers.  Now don't get me wrong, I love a good beer or glass of wine with dinner, or meeting up with friends for a few drinks, but I am way past my crazy partying days (that is until I meet up with my sorority sisters for our annual trip... then it's a different story ;)  ).  Is it weird that Joey and I would prefer to get up early and work out and get a head start on our day vs being hungover in bed and eating crappy food all weekend?  Maybe we're weird, maybe not!  Onto the alcohol...


Margarita / / Need I say more?!  Mexican food just isn't the same without a margarita.  Specifically a strawberry one!

Leinenkugel Sunset Wheat / / Have you had this beer?  It tastes like fruity pebbles!  Joey hates it, I love it!  Go try one now!  I will be trying the summer shandy this weekend thanks to multiple bloggers recommendations.

Mojito / / This is arguably, my favorite alcoholic beverage.  The minty-ness, sweetness - such a perfect combo!  We had a few a lot of these on our honeymoon.

Cupcake Sauvignon Blanc / / My absolute favorite brand of wine!  If you haven't tried it, run to the nearest liquor store and grab a bottle!  I've heard the Red Velvet wine is another really good one.

Taste of Tuesday: Quinoa Stuffed Avocados

This recipe was so easy and was so good!  It's perfect for a weeknight meal.  Everything I make for dinner during the week has to take me only 30ish minutes to make.  By the time I get home from my work out and feed the dogs, it's almost 7 pm and I'm starving!  Recipe adapted from this one.



Ingredients

  • 4 Avocados
  • 1/2 Cup Dry Quinoa (Makes 2-3 Cups Cooked)
  • 1/2 Cup Pico
  • Black Beans (I forgot this in my version)
  • Pinch of Chili Powder
  • Pinch of Garlic Powder
  • Pinch of Onion Powder
  • Pinch of Red Pepper Flakes
  • Pinch of Oregano
  • Pinch of Paprika
  • Pinch of Ground Cumin
  • Pinch of Salt
  • Pinch of Pepper


Directions

  1. Cook quinoa according to package.
  2. In a medium size bowl, mix all ingredients except the avocados.
  3. Cut avocados in half and scoop out of the skin.
  4. Lay avocados on a plate and place 1/4 of mixture on top.  We each ate a full avocado for a meal.
  5. Enjoy!

Weekend Update

We had such an incredible weekend!  Joey graduated from Rice with his MBA so most of our weekend was spent celebrating!  I remember about two years ago when he brought up the idea of wanting to go back to school.  We had only been dating 6 months or so but he made sure I was on board because this would change both of our lives.  I'm not going to lie and say this has been the best two years ever, because it hasn't.  We have made a lot of sacrifices, especially Joey, so to say we were thrilled for graduation would be an understatement.  It's been a LONG two years and I couldn't be prouder of my husband.  We are so glad to have this behind us and are ready to actually enjoy being married.  The past year (have we really already been married almost a year?!) was spent focusing on Joey's school.  I spent lots of nights at home with our dogs while Joey was at class, studying or having group meetings.  For all of those who have significant others in school, I definitely sympathize with all of you.  To Joey, I am so incredibly proud of you!  You went to work full time and then went to school at night - I still don't know how you did it!  You worked hard and deserve this degree!  Looking forward to making up everything we missed this past year.  :)

I also want to say happy belated mother's day to both of our moms.  Joey and I are SO blessed to have such incredible moms.  Both of our moms go above and beyond for us and we are so lucky to have them in our life.  They are both incredibly selfless and we are so thankful for them.  We love you both!
