All you do is add all the ingredients, mix, refrigerate, roll into balls and serve. So easy and so good!
Ingredients
- 1 cup oatmeal/old-fashioned oats
- 2/3 cup toasted coconut flakes
- 1/2 cup peanut butter
- 1/2 cup ground flaxseed
- 1/2 cup dark chocolate chips
- 1/3 cup honey
- 1 tsp vanilla extract
Directions
- Mix all ingredient together in a bowl.
- Refrigerate for 30 minutes.
- Roll into 1 inch balls (makes approx 20 balls).
- Refrigerate until ready to eat.

I've been meaning to make these forever. They look sooo good! I also like the plate on which you displayed them! :) Where did you get the ground flaxseed?
ReplyDeleteWe LOVE these and make at least a batch a week! We don't do the coconut but add craisins instead! I've also found that it helps if you microwave the honey and pb- seems to make them less sticky when rolling them out.

Adding a little coconut oil to the energy balls helps with shelf life and adds nutritious fatty acids to the mix as well!
