Saw It, Pinned It, Did It: Energy Balls

It's been a while since I linked up with Steph and Katie, but I'm back!  I've seen these no-bake energy balls all over Pinterest and decided to give them a try.  Here is the original pin:


All you do is add all the ingredients, mix, refrigerate, roll into balls and serve.  So easy and so good!
 
Ingredients
  • 1 cup oatmeal/old-fashioned oats
  • 2/3 cup toasted coconut flakes
  • 1/2 cup peanut butter
  • 1/2 cup ground flaxseed
  • 1/2 cup dark chocolate chips
  • 1/3 cup honey
  • 1 tsp vanilla extract
Directions
  1. Mix all ingredient together in a bowl.
  2. Refrigerate for 30 minutes.
  3. Roll into 1 inch balls (makes approx 20 balls).
  4. Refrigerate until ready to eat.

  2. I've been meaning to make these forever. They look sooo good! I also like the plate on which you displayed them! :) Where did you get the ground flaxseed?

  3. We LOVE these and make at least a batch a week! We don't do the coconut but add craisins instead! I've also found that it helps if you microwave the honey and pb- seems to make them less sticky when rolling them out.

Wow these looks seriously amazing, I’m drooling all over the screen here, I have to tray this receipt ASAP, I bet it taste as good at it looks, it doesn’t seem so complicated to prepare, I will give it a tray!   11. Adding a little coconut oil to the energy balls helps with shelf life and adds nutritious fatty acids to the mix as well!
