I found a new healthy recipe website so this was my first recipe to try from their blog. My version was adapted from this recipe at I Don't Go to the Gym. I love chicken pot pie and this was really good and didn't make me feel guilty when I ate it!
Ingredients
- 2-3 Cups Cooked Chicken
- 1 Cup Carrots
- 4 Stalks Celery
- 1 Cup Peas
- 1/2 Onion
- 2-3 Cloves of Garlic
- 3-4 Tbsp Flour
- 3 Cups Low-Sodium Chicken Stock
- 1 Puff Pastry Sheet
- Olive Oil
- Salt & Pepper
Directions
- Defrost puff pastry (40 min according to package) and preheat oven to 400 degrees.
- Chop chicken, celery, carrots, onions and garlic.
- Add a little olive oil to a deep skillet and saute carrots, celery, onion and garlic for 10 minutes.
- Add chicken, chicken stock and salt/pepper and bring to a low boil.
- Add 1 tbsp of flour at a time until it's the right thickness for you.
- Pour into a 9 inch square baking dish.
- Place puff pastry sheet on top of mixture and push onto edges of the pan. Place a few slices in the top of the pastry so the mixture will vent. Brush with olive oil.
- Bake for 15-20 minutes until the top is brown and the dough is cooked through.
- Enjoy! :)

This looks fabulous! Over the weekend a friend came over and made us homemade chicken pot pie and it was really good but yours looks much more healthier, so I'll definitely be trying your recipe instead of hers for next time.
